What’s the best way to TENDERIZE steaks?
Welcome guys! Today we’re doing a tenderizing experiment. We’re gonna tenderize some steaks we want to see which one’s gonna come out better. This is my nephew Angel and he is gonna give me a hand. To ensure there’s no difference between steaks I’m cutting them out out of one entire loin. Since I was able to get a lot of steaks out of this loin I’m gonna be saving most of them for my main channel Sous Vide Everything make sure you check it out if you haven’t already. We’re left with three fantastic steaks for our experiment. First I’m going to be using the enzymes from my fresh pineapple to see how tenderized the steak will be. For the second stake I’m going to be using rock salt.
Here’s how. For the last stake I’m going to be using jacquard, which is a machine to tenderize the stake. From left to right we got the regular steak,the salt, the pineapple and the jacquard. I’m going to be keeping this salt and the pineapple on both steaks for one hour. Now I’m going to be cleaning the salt and the pineapple from both steaks. Make sure to remove all of it. So Angel what do you think so far? We got the regular steak and we got here our salt and we got the pineapple and we got the jaquard.
I think the one that’s gonna be the most juicy is probably gonna be the pineapple. Pineapple looks like it disintegrated right? Yeah man. What’s up with that? The jaquard looks good too the salt is kind of dark. Yeah. Right what do you think this one’s gonna do? It’s gonna be average. it’s gonna be regular steak? All right so now we’re gonna season these bad boys and we’re gonna cook em up. Let’s do it! Fom left to right we got a regular steak, the salt, the pineapple and the jaquard. I’m keeping the season is simple with salt pepper and garlic powder.
As always I seasoned both sides. Now let’s cook these bad boys! For today’s cook I’m using my Weber. I’ll be using the reverse sear which is my preferred method for steaks. I’m first cooking the steaks at 550 degrees Fahrenheit for 10 minutes then searing it off. Angel give me five you did an amazing job. Now we are ready for the best part are you ready to try them. Lets go! Let’s do it! All right we’re gonna start off. Here we got the regular steak, we got the salt, we got the pineapple and we got the jacquard. Let’s do it. I wanna try the pineapple man. You wanna try the pineapple. Pineapple looks tender right? Let me slice it up so we can eat it, let’s do it. Oh my god angel this pineapple is falling apart this pineapple is really falling a…oh my god is so tender is hard to cut let’s try them. No more chit-chatting man it’s time to eat. You ready? I’ve been ready. Let’s go for the regular steak. Regular steak. Regular steak.
Go for it. Taste amazing but it’s not tender. Nope. It’s very flavorful but it’s a regular steak. Yeah. You agree? There’s a few parts that were a little… Silver skin there were a little bit chewy. Yeah. Right. All right let’s do it let’s go for the next one Angel try it. Okay let’s do this cut out the fat. Oh you… ha, ha. All right I cut out the fat and the silver skin let’s try this part. This is the one with the salt, it is a little more tender. I didn’t cut out the fat and the fat was still pretty soft. It was soft? Yeah. How do you like this one? This one, do you think this one is more tender than this one? Yeah, yeah definitely definitely more. I agree.
It’s a little bit more tender than this one here. Let’s go to the next one Angel. Go for it! Is this the one I’ve been waiting for? This is the pineapple This is so tender that the fat just fall off look at that look at how tender this one is. You ready? I’m ready I’ve been ready, born ready! I know you’re excited for this one. Let’s do it. We don’t have to do anything else. Wow! We could stop right there. This one is tender this one is super tender it’s fantastic isn’t it. They’re gonna ask us if it taste like pineapple. It doesn’t taste like pineapple but it has like it has a little bit of sweetness. Do you think so? I think so yeah compared to the last two it had a little sweetness to it.
Mm-hmm I think it’s just the tenderness I’m not sure. But how do you like it? I don’t like it I love it. Its fantastic It’s so good it was fire! it’s fantastic I really liked it. He’s right is a little bit sweet but not really sweet. Yeah no it’s just it’s just a bit sweeter than the rest. Yeah all right so last one let’s go for the jaquard. Ok. I ate the whole thing. With the fat and everything with the silver skin and everything you go for it Angel you go go for it mmm Tastes fantastic! Do you agree yeah hmm all right let’s give them our final verdict.
Which one is the most tender for you? For me I think I was right I think it was the pineapple. I agree a hundred percent out of all of these the pineapple is the most tender one. It’s falling apart when you eat it right? Oh yeah. And it does have a sweet flavor but I don’t think it’s the pineapple I think it’s just it’s the steak became I don’t know. Soft. It’s so soft it’s like…. It does not taste like a New York Strip tastes like a ribeye all right so this is number one for sure Angel. Which one is number two for you? I think it was the salt, yeah I think in my opinion probably the salt. I agree with Angel So number two is the salt and then number three would be… This one. The jaquard Jaquard. The jacquard is number three and then the last one is the regular steak. But they all taste fantastic and they all taste the same except the pineapple tastes a little bit different not sweet like pineapple sweet but so tender that it changed the flavor. Yeah, it was just way better than the rest in my opinion.
I agree as well so final verdict pineapple is the most tender number one number two salt number three I can’t say that your jaquard whatever it’s called and number four is the regular steak you.
